Soil 75% of the vineyards in Calatayud are found in geological areas made up of loose material, gentle slopes and ridges with sands, clays and slate. Wine Style The greater part of the Garnacha crop is situated in high areas including the highest vineyards in Aragon, and in fields on steep slopes that are difficult for machinery to operate on. Be- cause of this, most of the cultivation work is done by hand. Red Garnachas of Calatayud has a minimum alcohol of 12.5% and shows a fine balance of both acidity and alcohol. ‘Calatayud Superior’ is a special designation for reds made with a minimum 85% red Garnacha from low-yielding vines of at least 50 years of age. Garnacha is also used to craft lively and refreshing rosé wines. Characteristics “The red wine of the Garnacha variety represents the essence of Calatayud wines. The colour of the wines is a mild intense cherry.” Aromas of dark fruits, blackberries and gooseberies are present, as is the spiciness of cinnamon and clove. The aroma also features a certain amount of minerality. The wines are balanced by the “freshness provided by the tartaric acidity,” and are “easy, fleshy and big on the palate.” Calatayud Superior: These wines are a picota cherry red, with aromas of fruits of the forest and red berries. Their aromatic intensity allows through mineral and balsamic tones, wrapped with a touch of clean wood. Easy on the mouth, tasty, with an intense concentration of fruit and toasted tones, these wines leave an agreeable aftertaste. Rosés: Normally these wines are elaborated using the red Gar- nacha variety.” They are light pink and feature strawberry and varietal aromas, “which in Calatayud manifests itself through rose petal aromas, along with red fruits such as raspberry. In general these wines are intense on the palate, easy and fresh.
