Azérolier Crataegus azarolus L ou Zaaroura ? est un arbuste qui fait partie des ressources végétales algériennes à intérêt économique et sanitaire Pourtant il n ? est pas connu du grand public et n ? est pas exploité ou utilisé de manière convenable Les travaux de recherche entrepris jusqu ? à présent n ? ont concerné que son identi ?cation sa caractérisation et sa préservation à des ?ns écologiques et pharmacologiques Dès lors une étude des potentialités alimentaires s ? avère nécessaire A ?n de contribuer à la valorisation de cette espèce une étude du pro ?l de l ? huile extraite de ses amandes en acide gras a été e ?ectuée par chromatographie en phase gazeuse couplée à la spectroscopie de masse Les résultats obtenus ont montré que cette huile est riche en acide palmitique oléique et linoléique Ces données montrent l ? intérêt de cette espèce pour les nutritionnistes ainsi que les forestiers Mots-clés Crataegus azarolus L huile végétale acide gras amandes valorisation ABSTRACT Hawthorn Crataegus azarolus L or Zaaroura is a shrub widely distributed in various parts of Algeria In spite of its economic and sanitary interest it is not known by the general public and is not exploited or used in a suitable way The research carried out previously was limited to its identi ?cation characterization and conservation for ecological and pharmacological purposes The aim of this study is to investigate its potential use as food supplement The oil extracted from its seeds was analyzed by gas chromatography coupled with mass spectrometry The result indicated the presence of three major fatty acids palmitic acid oleic acid and linoleic acid The data obtained showed that this species could be of special interest to nutritionists as well as foresters Keywords Crataegus azarolus L vegetable oil fatty acid seed value INTRODUCTION Une bonne partie des ressources végétales en Algérie à intérêt économique social et sanitaire n ? est pas connue du grand public et n ? est pas exploitée ou utilisée de manière convenable
